This honey was awarded the Absolute Gold Medal at the BIOL MIEL 2025 Award, the highest distinction of the international competition dedicated to excellence in organic honey production.
The award certifies a superior quality, recognizing both the final product and the beekeeper’s work, as well as the exceptional botanical richness of the Sicilian territory of origin.
The company works exclusively with the Sicilian Black Bee (Apis mellifera siciliana), an autochthonous subspecies protected as a Slow Food Presidia.
Easily recognizable by its very dark color, the Sicilian Black Bee is known for its early activity, productivity and strong adaptability to the Mediterranean environment, allowing for a balanced and sustainable honey production.
In Sicily, thistle grows in numerous wild species, often local ecotypes. These plants generally remain under one meter in height, although some varieties can grow taller.
The flowers vary in size and color, ranging from pale white to soft pink tones, contributing to the aromatic complexity of the honey.
Thistle honey has a light amber color when liquid, sometimes tending towards ochre shades depending on origin.
It naturally crystallizes after approximately three to four months, developing a soft, creamy and spreadable texture.
This honey is known for its strong and well-defined flavor profile.
Its intense aroma recalls Mediterranean countryside flowers, while the taste is bold, slightly herbal and delicately spicy, with a persistent and characteristic bouquet.
